Gitana Winery in Moldova
Gitana Winery was established in 1999, based on an old winery founded in 1953 that came under the ownership of the Dulgher family. The Dulgher family undertook extensive efforts, including renovating the facility, remodeling the cellars, installing barrels and oak vats, and, of course, planting new vines. The vineyards owned by Gitana Winery are located in the Valul lui Traian viticultural region, and the total area of the winery amounts to 390 hectares. Gitana Winery emphasizes the cultivation of local grape varieties and continuously expands its vineyards. Gitana's vineyards are located in an area spanning two villages in the Leova district and are divided into three areas: one in Filipești village and another in Romanovca village.
Brewing Process
In the winemaking process for white wine, after destemming and crushing the grapes, the winery uses cryomaceration. The cryomaceration technique allows for maximum extraction of flavor compounds contained within the grape skins without negatively impacting the quality of the white wine. The resulting must is cooled to 5-8°C for 10 to 24 hours. White wine is aged in stainless steel tanks or 225-liter barrels. Red wine is characterized by the maceration and fermentation process on the must. Fermentation takes place in oak vats, solely by the power of local yeasts, extracting the necessary tannins, aromas, and pigments. Wines made from grapes grown by a family that knows their soil intimately are also popular as the "Autograph Series" and "Portrait Series." In particular, the Autograph wines, made from grapes grown in the best land at Gittana Winery, are a deeply flavorful and special series that is sure to captivate you.
